We are collecting it directly from the farmers of Idukki. Idukki, located in the Indian state of Kerala, is known for its production of high-quality spices, including white pepper. White pepper is derived from the same plant as black pepper, known as Piper nigrum. However, it undergoes a different processing method that gives it a unique flavor and appearance. The production of white pepper involves harvesting fully ripe pepper berries and soaking them in water for about a week. This process allows the outer skin of the berries to soften and decompose. The outer layer is then removed by rubbing and washing the berries. Afterward, the inner seed, which is white in color, is dried until it reaches the desired moisture content.
